Cabbage salad

This cabbage salad recipe is a fresh and delicious side dish! It's colorful, crunchy, and doused in an easy peanut dressing. It's a fun alternative to coleslaw at a cookout or picnic.

Ingredients

  • 4 cups shredded green cabbage
  • 4 cups shredded red cabbage
  • 1 medium red bell pepperstemmed, seeded, and very thinly sliced
  • 1 cup julienned carrots
  • ½ cup chopped fresh cilantro
  • ½ cup toasted sliced almonds or pepitas

Dressing

  • ¼ cup avocado oil
  • ¼ cup apple cider vinegar
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon maple syrup
  • 1 tablespoon toasted sesame oil
  • 1 garlic clovegrated
  • ¾ teaspoon sea salt

Instructions

  • In a large bowl, toss together the green cabbage, red cabbage, red pepper, carrots, and cilantro.
  • Make the dressing: In a medium bowl or liquid measuring cup, whisk together the avocado oil, vinegar, peanut butter, maple syrup, sesame oil, garlic, and salt.
  • Pour the dressing over the cabbage mixture and toss to coat. Set aside for 10 minutes to allow the cabbage to soften.
  • Season to taste and top with the almonds. Toss and serve.

 Diane Kahle's baked Pinapple


4 beaten eggs

1/2 cup sugar

4T flour

2 cans pineapple - 1 tidbits, 1 crushed, regular sized cans

mix and put in casserole baking dish

top with cubed bread and butter

sprinkle on cinammon

Bake at 350 for 1 hour

Linzer Torte (like Gordon used to make)



200g flour
200g hazelnut
200g sugar
200g butter not melted- sliced
Lemon peel
1/2 tablespoon cinnamon
1 tablespoon nutmeg
1 Tablespoon rum
1 egg
Mix- food processor
Chill for 1/2-1 hour
400 degrees ferenheit for 45 min


Butter is the first thing you add to the food processor and eggs are the last. 

Alternatively, you can mix these things by hand. Start with the first 4 ingredients and then add the rest. I think Gordon might have used his hands to mix it.

Coffee Cake

2 sticks butter
1 1/2 cups sugar
cream these two things and
then add 2 eggs

2 1/2 cups flour
1 teaspoon baking power
1/2 teaspoon soda

add alternately with 1 cup sour cream and 1 teaspoon vanilla

prepare 1/2 cup chopped nuts, 4 tablespoons sugar and 1 teaspoon cinnamon

alternate layers in a bunt pan and bake 1 hour at 350.

Eileen's Pie Crust

2 1/2 cups of flour (2 c. unsifted)
1 t sugar
1 t salt

using a steel blade pastry cutter, cut in

1 cup butter

cut until no butter piece is larger than a pea

1/3 cup + 1 T ice water

mix 1 T water with
1T flour mixture

cut it into the flour mixture

Then add the 1/3 cup water and cut until mixed, can use your hands if easier. Don't let the dough get too warm. The butter needs to stay cold.

Once you have a dough that holds together, refrigerate for a bit, maybe 30 minutes. Then roll out and place in pie pan, refrigerate again if it's warm.  Add filling and a top crust if desired and bake.

Carmel Brownies (Blondies)

1 stick butter
1 1/2 cups brown sugar (can use 1/2 sucanat)
2 eggs
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla
1 cup nuts (I used walnuts)

melt butter and sugar together and then mix everything together. put in a greased 9x9 baking pan and bake at 350 for 35 mins. Put powdered sugar on top after removing from oven. Let cool about 5 minutes before eating.

Cheesy potatoes

8 medium potatoes
1 stick butter
½ cup sour cream
1 ½ cup shredded cheese
1 cup chopped cooked bacon (optional)

peel and cut potatoes. Boil in salted water until tender. Drain and mash. Mix in butter. Mix in sour cream and ¾ cup of bacon, and 1 cup of the cheese. Sprinkle potatoes in casserole dish. Sprinkle with remaining cheese and bacon.

Bake in 305 degree oven for 20 minutes

Nancy's White Sangria

The Best Sangria Ever!


1 750 ml bottle of white wine - something drinkable, but doesn't have to be really good

2 T sugar

3T or 1/4 c Grand Marnier

2 T Brandy (suggested French Apply Brandy, although not necessary) or Quantro - never tried this

- mix well, then add the fruit

1 cup fruit - but can use more, I'd double it - fruit suggested: kiwi, pears and grapes. Other fruit I've used: raspberries, strawberries, blackberries, blueberries, melon, peaches (anything that will absorb the liquid).

garnish with mint

Let it chill for about 6 hours for the flavors to meld.

Just before serving: add sparkling water - I usually put a nominal amount, add to taste.

Gingerbread boys

mix
1 /3 cup butter
1 cup brown sugar
1 1/2 cups black molasses

stir in
1/2 cup cold water

then add:
1 t. salt
2 t. allspice
2 t. ginger
2 t. cloves
2 t. cinammon
2 tsp. soda dissolved in 3 T. cold water
7 cups flour - I think the dough became so stiff that I could add only 5 cups of flour.

oven - 350
bake 15-18 min.

chill the dough and then roll out thick 1/2 inch dough and cut with cookie cutter
add your raisin or candy eyes, etc. After baking use icing to pipe on embellishments. Can use twizzlers (unbraided) for bow ties and trim.

I think we made a butter cream icing made with lots of butter and cream (and sugar).

Molasses crinkles

Mix
3/4 cup butter - I melt it for ease of mixing
1 cup brown sugar
1 egg
1/4 cup molasses

Add
2 t. soda
1/4 t. salt
1/2 t. coloves
1 t. cinnamon
1 t. ginger
2 cups flour

chill dough and then roll into balls and then roll in sugar.
grease your baking sheet.
375 degree oven
10-12 minutes.

I always double this recipe. You can freeze the balls and bake some later.
